The dairy industry wastewater contains a large concentration of organic pollutants. These are easy biodegradable substances. They are fermentable and they simulate microorganisms growth, that causes their negative influence on water environment. Very important pollutants in dairy industry are nitrogen compounds. In the paper the influence of such factors as sludge age, pH, TOC on some forms of nitrogen removal has been presented.
